Savory Tahini Spinach

Spinach is an easy green to find year-round and a nutritional powerhouse. Maybe not the way Popeye showed it to be, but enough to make it worth cooking some up for yourself!

Spinach is a great source of iron which helps in the function of red blood cells which helps move oxygen around the body, energy production, and DNA synthesis. Spinach is also an excellent source of vitamin K, vitamin A, vitamin C and folate as well as manganese, magnesium, iron and vitamin B2.

Tahini is another great health addition. Tahini is nutrient-rich, high in antioxidants, has antibacterial properties, anti-inflammatory compounds, and much more.

Ingredients
Olive Oil

8 bags of spinach

1 Tahini jar (1-1.5 cups)

8-10 ounces of coconut aminos (or soy sauce- if soy you will need to add sugar to taste)

Sesame seeds

Instructions

Heat the olive oil in a large pan over medium heat

Add the spinach to the skillet and cover; allow to cook 5 minutes

Remove from heat

Squeeze excess water out of spinach with hands

In a large bowl mix together spinach, aminos, and tahini until blended

Plate and sprinkle with sesame seeds
