Breakfast Tacos

Tacos are a great meal option when feeding a big group. Not only is it easy to make lots of the various fillings but the flexibility of ingredients makes it a breeze to feed for different needs. Add things, leave them out… you can feed all your friends- dairy free, gluten free, paleo, veggie, vegan, you name it! 

Here is what we used but feel free to substitute and get creative!

Corn Tortillas

Al’s eggs (see recipe below)

Bacon

Sautéed Potatoes and Carrots

Purple Cabbage Slaw

Avocado

Condiments- Sriracha, Cheese, Furikake, Chili Lime finishing Salt

Amounts will vary depending on how many you are cooking for, more is better ‘cause… leftovers!

To Start

Dice and sauté the onions in oil on medium to high heat.

While that is cooking, peel and dice potatoes, rinse and clean carrot ends.

Toss potatoes in with the onions and add salt, pepper, and paprika to taste. You will need to continuously stir this throughout your prep.

In another pan on medium to high heat add oil, carrots, red pepper, garlic or garlic powder. Again continue to stir this as you are cooking.

Let that cook, and being finely slicing the cabbage for slaw. Cut the slices as thin as possible. Place in a bowl and add salt, lemon, oil, chiffonade basil to taste.

Al’s Eggs

In a separate bowl, crack 2 eggs per person, add a small splash of Bragg’s Aminos per egg, add a small splash of sesame oil per every two eggs, and 1/8 tsp of sugar per egg. Whisk with a fork.

Set a pan to medium/high heat and cover with oil. Pour a thin layer of egg in and scramble with chopsticks or spoon/spatula as seen below. They will cook quickly, so move to a plate and beware you do not over cook and make them rubbery.   


Taste test your potatoes and carrots. If cooked, combine. If not, let them cook longer.

Cut up avocados into slices. Warm the tortillas.

Once all your taco fillings are completed, build to your liking with the potatoes and carrots, egg, avocado, slaw, bacon.

You can top with some hot sauce, furikake, chili lime salt sprinkle.


Ways To Mix It Up

Substitute sweet potatoes, add rice, veggie bacon, build it on a bed of greens.

Tons of options and plenty of ways to accommodate everyone.

Multiply depending on how many you are cooking for:

1-2 slices of bacon per person

2 eggs per person

1/4 of an avocado per person

1/2 potato per person

1/2 carrot per person

3 tortillas per person
