Passion Fruit Mousse Passion Fruit Mousse

#mixitup | Skratch Hydration Mix has many uses outside of just hydration!

It would be pretty safe to say that passion fruit mousse (Mousse de Maracuya) is one of Brazil’s most popular desserts. It’s an easy dessert to make, and it’s delicious.

This recipe was inspired by Passion Fruit and Skratch enthusiast, Daniel. Daniel grew up having mousse and juice made from passion fruit, the unique tartness and flavor of passion fruit has always been a favorite of his. When he first tasted Skratch Labs’ Passion Fruit Sport Hydration Mix, he was delighted that it tasted like the real stuff (the side effect of using real fruit!). A scoop of the mix into his Nalgene immediately brought back feelings of childhood, tasting just like the juice he grew up with, and that got him wondering—would it make good passion fruit mousse too?

It turns out it does!

While the basic recipe everyone uses for this mousse in Brazil consists of mostly cream and condensed milk, a little research on healthy mousse recipes indicated we could try a mix of greek yogurt and egg whites. After comparing the two ways of making it, we actually preferred the healthier/high-protein version of yogurt and egg whites.

So, here you go:

Healthy Passion Fruit Mousse - Mixed Up by Skratch

Making it:

  1. Combine Skratch and egg whites in a large bowl (stand mixer if you have one) and mix well. (If you’re not comfortable having raw eggs, you can put a heat-resistant bowl in a pan with hot water on the stove, making a double boiler, and heat it until it reaches 160F as you mix it.)

  2. Beat the egg whites with a whisk until it forms firm peaks.

  3. Fold the peaked egg whites into the Greek yogurt.

  4. Dissolve the gelatin into the warm water. Mix it into the egg whites, Skratch, and yogurt mix.

  5. Pour final mousse into your serving bowl, put in the fridge, and let it set for 2-3 hours until firm.

Optional, topping to make it a bit more legit:

Passion fruit mousse will often have some of the actual passion fruit seeds as a topping. If passion fruit isn’t available where you live, you can make a knock-off with chia seeds and Skratch, as in the recipe below. You can also try something else, like candied ginger, mint, and/or white chocolate shavings.

Passion Fruit Doppelgänger

  • Let it sit in the fridge overnight. Spread it on top of the mousse.
